Broccoli Salad

“Life starts all over again when it gets crisp in the fall.”

 F. Scott Fitzgerald, The Great Gatsby

As the air turns cooler on this first day of fall, the broccoli is starting to produce again. I went out to the garden and gathered several little broccoli heads and made a cold broccoli salad for supper.

Broccoli Salad

3 cups of broccoli heads and stalks chopped into bite-size pieces

½ cup of raisins

8 slices of bacon, cooked and crumbled

¼ of a medium-size onion chopped into finely pieces

1 cup of nuts of your choice (I used sliced almonds.)

½ cup of Miracle Whip or mayonnaise

¼ cup of sugar

¼ cup of white vinegar

In a large bowl add broccoli, raisins, bacon, onion, and nuts and toss to mix well. In a small bowl add Miracle Whip, sugar, and vinegar and mix well. Pour liquid mixture over broccoli and stir to coat well. Cover and place in refrigerator until chilled and the flavors have a time to blend together.

  2. This recipe is similar to the same delicious broccoli salad recipe I use. My version has red wine vinegar, which is delicious. This salad is always the first to go at potlucks, and you will always be asked for the recipe!
