Cooking provides more
than a nutritious meal for your body; it also nourishes the heart and soul. Cooking is about sharing your table with
family and friends. There is nothing more special than giving someone something
you made yourself. Wholesome, simple food made in your kitchen from crops you
grow, meat you have raised, all flavored with home grown herbs reflects the
care you gave in producing the food and preparing it for your family and
friends and how much you care and appreciate them.
A special treat to have
in the morning is this delicious cinnamon coffee ring. It goes perfectly with a
hot cup of coffee for the adults or a glass of cold milk for the children. It will
look like you took a lot of time and effort to make it, but really it is quite
simple.
Cinnamon Coffee Ring
2 ¼ teaspoon of yeast
¼ cup of lukewarm water
1 cup of buttermilk
½ cup of butter
1 teaspoon of salt
½ cup of sugar
2 teaspoons of lemon
juice
2 eggs,
beaten
½ teaspoon of cinnamon
4-5 cups of flour (I
like to use half of whole wheat flour and half of all-purpose flour.)
Melted butter
½ cup of brown sugar
1 teaspoon of additional cinnamon
Soften yeast in water
and set aside. Scald milk and pour into a large mixing bowl. Add butter, salt
and sugar. Stir to allow hot milk to melt butter. After butter is melted, add
beaten eggs, lemon juice, and cinnamon. Add the soften yeast to the mixture and
stir in flour until a soft dough forms.
Knead dough for 5-10
minutes until dough is soft and elastic. Brush lightly with shortening or
homemade lard. Cover and let rise in warm place until doubled in size.
Roll out dough into a
rectangle shape about ½ inch thick and 8 inches wide. Brush with melted butter.
Then sprinkle with brown sugar and the additional 1 teaspoon of cinnamon.
Roll the dough up like
a jelly roll. Seal the edges with a fingertips dabbed with water.
Fold the dough into a
ring on a greased
baking sheet.
With kitchen scissors cut the ring into slices going
about ¾ of the way through to the inside edge of the ring.
Turn each slice on its side, slightly
overlapping.
Let dough rise again and then bake at 350°F.
for 25-30 minutes until done.
While, it cools make a
powder sugar icing.
Powder Sugar Icing
¾ cup of powder sugar
2 tablespoons of hot buttermilk
¼ teaspoon of vanilla
Combine all ingredients
and mix until smooth.
