On a recent Saturday I
had a bread baking day. I made several different types of homemade breads. One
that I really loved was buttermilk rolls. I made the rolls fresh from my own homemade
buttermilk.
The ingredients needed
to make these buttermilk rolls are:
¼ cup of lukewarm
water
1 teaspoon of sugar
¼ teaspoon of baking
soda
1 teaspoon of salt
3 tablespoons of soft
shortening or homemade lard (How to Render

2 ¼ teaspoons of
yeast
2 ½ to 2 ¾ cups of
flour
First, scald the
buttermilk by bringing it to its boiling point and then cool to lukewarm. Then
add the water, sugar, baking soda, salt, and shortening while stirring in well.
Next, add the yeast and stir until dissolved. Stir in half of the flour and
beat well.
Add the remaining flour
and form into a circle. Then cover and let it rest for 10 minutes.
Knead for 5-10 minutes
until smooth and elastic. Shape into rolls and place into a greased muffin tin.
Let the dough rise
until doubled in size in a warm spot. I let it rise inside the oven with only
the oven light on with the oven door closed. Bake at 400º F. for 15 to 20
minutes until golden brown.
How wonderful to have homemade
buttermilk rolls served with homemade
butter or homemade cream cheese topped with homemade jelly
or jam or homemade
fruit butters!
these look soo good.. can not wait to try them.. also .. I love the plate that they are sitting on.. looks like a farm/diner plate.. I use to have some that said "diner" on them with a scratch picture of eggs and bacon .. have only one left
ReplyDeleteThank you for the compliment! These rolls freeze well. I try to make extra to put in the freezer for a busy day. I defrost them by placing them on the counter in the morning, so they are ready by supper. If I forget, I can reheat them in the microwave for a few seconds.
