The corn this year grew really good at the beginning of the season, but did not grow very tall. The corn tasseled out and the corns on the stalks were not very big. I do not know if this was related to a watering issue or lack of nitrogen. The ears also were not completely filled with corn but, what corn was on there were ready to be picked. I picked what corn I could to use as food for my family. The ears of corn that were too small I left on the corn stalk. After gathering what corn I could use I pulled the whole corn stalk out of the ground. I leaned it against the fence to dry. I will use this as feed for the cows in the winter. My husband tilled the corn field again and I planted it with 2 pounds of corn seed. I will be able to have another harvest of corn this summer.
I have quite a bit of vegetables that I am eating from the garden already so, I decided to preserve the corn for winter use. I shuck the corn outside by removing the corn husks and the corn silk. I cut off any bad parts of the corn. This corn discards will be given to the pigs and cows to eat. Once that was done I bought the corn into the house. I rinsed off the corn well. I cut the kernels of corn off of the cob.
I then water blanched the kernels for 4 minutes.
After blanching the corn I immediately cooled off the corn by dipping it into a pot of cold ice water.
Afterwards I measured ¾ pounds of corn into individual sandwich size plastic storage bags. I packaged ¾ pounds to feed my family at one meal if you need more to feed your family then by all means package more.
I then placed these bags inside of another gallon size freezer grade plastic bag. I made sure to squeeze the excess air out of the bags before sealing them. I then labeled the packages with the contents and the date.
