Eggs, Eggs, I've Got Too Many Eggs!

The hens have been laying lots and lots of eggs. We have been eating them fried, scrambled, in omelets, deviled eggs…. But now I am craving something sweet. I found my old flan recipe and dusted it off. Flan is custard made out of milk, sugar and eggs.
It has been a while since I have made flan. My daughter has always helped me to make flan, but when she was about 13 years old she wanted to make the flan by herself. That is the day the apprentice became the master. Her flan was better than mine. And since that day she has always made the flan. Whenever we had a craving for it she was happy to make it. She makes it so well that we often request it for special occasions. She is a good cook. But today I was craving flan and she wasn’t here because she is going to college in San Marcos, Texas so it was up to me to make it. It turned out really good almost as good as my daughter’s.
I’ve included the recipe below. Give it a try. I am sure you’ll like it!

                                       Flan (Custard)
1 quart milk (That’s 4 cups. If you are a little short on milk you could use 3 cups of milk and 1 cup of water.)

The peel of 1 orange

The peel of 1 lemon or lime

¾ cup of sugar

Pinch of salt

½ cup of brown sugar

6 eggs

Pour a quart of milk in a large saucepan. Use a fine grater to grate the peel of the orange and lemon or lime into your saucepan. You can keep the orange and lemon or lime in your fridge for use later but it needs to be refrigerated because without its peel it does not keep as well.

Also add ¾ cup of sugar and pinch of salt to the saucepan. Bring to a boil and cook gently until the liquid is reduced to 3 cups, which took me about 25 minutes. During the cooking time make sure to stir the mixture occasionally to break up the milk film that forms on the surface. Turn off the stove and let the mixture cool.

As the milk and sugar mixture cools, add ½ cup of brown sugar to the bottom of your baking dish. I use a 2 quart baking dish. Cover the whole bottom surface of the baking dish by gently pressing the brown sugar to the bottom of the dish.
Beat eggs and milk mixture well.
Next, beat 6 eggs in a large bowl. Gradually add the warm milk mixture to eggs. Make sure to beat the egg and milk mixture well so that the ingredients are well blended together.
Flan ready to go in the oven.
Preheat the oven to 325 degrees Fahrenheit.  Pour the milk, sugar and egg mixture into the baking dish that has brown sugar on the bottom.  Place the baking dish into a larger baking pan. Add water into the pan so that the water is about halfway up the side of the baking dish. Bake for about 90 minutes or until a knife inserted comes out clean. If you see that the flan is excessively browning you can cover it loosely with foil. Remove the baking dish from the baking pan.
Ready to eat!
To serve, run a knife around top edge of flan and invert onto a serving plate. The flan taste delicious both warm and cold. Be sure to refrigerate the leftovers if there are any. This recipe makes 6-8 servings depending on who you are feeding.
