Amish Wheat Pancakes

I have been cooking with Amish Friendship Bread starter for two years now which means my batter is two years old. It still tastes as good if not better than when I first received it from my friend, Shana. If I bake a cake I always use my Amish batter. From this Amish batter I have made cinnamon Bundt cake, pumpkin bread, banana nut bread, pineapple and coconut cake, applesauce bread and Christmas fruit cake. With just a substitution or addition of a few ingredients you can use this batter to make a variety of cakes, sweet breads and even pancakes. This Amish wheat pancake recipe is a favorite in my family.

Amish Wheat Pancakes
1 cup wheat flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoon oil
2 cups Amish Friendship Bread starter
½ cup milk (plus or minus ¼ cup depending on the thickness of the Amish Friendship Bread starter.)
1 egg
In a large bowl combine the flour, salt, baking powder and baking soda.
 Next, add the oil, Amish Friendship Bread starter, milk and egg. Combine the wet and dry ingredients and blend well.
Ladle the batter onto a greased griddle. I like to cook this outdoors on my propane grill. I use an old baking sheet as my griddle. As soon as the batter forms bubbles indicating that the bottom is sufficiently brown I flip the pancake over with a spatula and let the other side cook. I top with a bit of butter.

 The batter is sufficiently sweet that you do not need to add pancake syrup. I also have added pecans or walnuts to my batter. Also I have topped with sliced bananas or other fruit on occasions. Plain or dressed up these Amish wheat pancakes are sweet and delicious!
